July Fun Days

We enjoy celebrating monthly fun days in our home. Here is our list of links, ideas, and books we love to read for the month of July. I like to pull out all books that connect with birthdays, anniversaries, special days, or events and place them in our monthly basket at the start of the month. We don't always get around to celebrating every single thing listed here, but we have fun with what we do celebrate, which for us, is the point.

July 1st

On July 17th, 1790, the sewing machine was patented!

The Day that Disneyland opened in 1955. We have some Mickey Mouse cookie cutters and I love to make Mickey mouse sugar cookies for the kids on this day. Even if you don't have the cookie cutters, they would be easy to make. Walmart also has some frozen pizzas for kids in the shape of Mickey Mouse and again, it would be easy to make your own with your own homemade dough. We enjoy pulling out some of our Mickey Mouse books to read on this day.


July 18th

National Ice Cream Day! July is National Ice Cream month...so don't forget you can celerate all month long! It's a great day to make some Ice Cream sundaes, homemade ice cream, or ice cream in a bag! Muffin Mania

For Donna.....

Applesauce Spice Muffins

1 cup sugar
1/2 cup butter
1 egg
1 cup applesauce
1 tsp cinnamon
1 tsp allspice
1/2 tsp ground cloves
2 cups flour
1 tsp baking soda
1/2 tsp salt
Cream the sugar and butter together. Add egg, applesauce, spices. Sift in dry
ingredients and mix well. Bake at 350 for 15 minutes.

Chocolate Chocolate Chip Muffins

Ingredients:
2-1/2 cups all-purpose flour
1-3/4 cups whole wheat flour
1-3/4 cups packed brown sugar
1/2 cup baking cocoa
1-1/4 teaspoons salt
1 teaspoon baking powder
1 teaspoon baking soda
2 egg whites
1 egg
2 cups unsweetened applesauce
1-3/4 cups fat-free milk
2 tablespoons canola oil
2-1/2 teaspoons vanilla extract
1-1/4 cups semisweet chocolate chips
Directions:
In a large bowl, combine the flours, brown sugar, cocoa, salt, baking powder and baking soda. In another bowl, whisk the egg whites, egg, applesauce, milk, oil and vanilla. Stir into dry ingredients just until moistened. Fold in chocolate chips.
Coat muffin cups with cooking spray; fill three-fourths full with batter. Bake at 350° for 18-20 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks. Serve warm. Yield: 32 muffins.

Chocolate Chip Banana Muffins

Ingredients:
3/4 cup all-purpose flour
3/4 cup whole wheat flour
1/2 cup wheat bran
1/2 cup packed brown sugar
1 teaspoon baking powder
3/4 teaspoon baking soda
1/2 teaspoon salt
2 eggs, lightly beaten
1/4 cup fat-free milk
1-1/3 cups mashed ripe bananas (2 to 3 medium)
1/3 cup unsweetened applesauce
1 teaspoon vanilla extract
1/2 cup miniature chocolate chips
1/3 cup chopped pecans
Directions:
In a large bowl, combine the first seven ingredients. In another bowl, combine the eggs and milk; stir in the bananas, applesauce and vanilla. Stir into dry ingredients just until moistened. Stir in chocolate chips. Coat muffin cups with cooking spray or use paper liners; fill three-fourths full with batter. Sprinkle with pecans. Bake at 375° for 18-22 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Yield: 1 dozen.

Orange Muffins

Ingredients:
2 tablespoons plus 1/4 cup sugar, divided
4-1/2 teaspoons all-purpose flour
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 tablespoon cold butter
2 cups reduced-fat biscuit/baking mix
1 egg
1/2 cup orange juice
1/2 cup orange marmalade
2 tablespoons canola oil
1/4 cup chopped pecans
Directions:

In a small bowl, combine 2 tablespoons sugar, flour, cinnamon and nutmeg; cut in butter until crumbly. Set aside for topping. Place the biscuit mix in a bowl. Combine the egg, orange juice, marmalade, oil and remaining sugar; stir into biscuit mix just until moistened. Fold in pecans. Coat muffin cups with cooking spray or use paper liners; fill two-thirds full with batter. Sprinkle with reserved crumb mixture. Bake at 400° for 18-20 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Serve warm. Yield: 1 dozen.

Cinnamon Chip Muffins

Ingredients:
2-1/2 cups all-purpose flour
1 package (3.4 ounces) instant French vanilla pudding mix
2 teaspoons ground cinnamon
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
3 eggs
1 cup buttermilk
1/2 cup vegetable oil
1/2 cup honey
1 teaspoon vanilla extract
1 cup miniature semisweet chocolate chips
Directions:

In a large bowl, combine flour, pudding mix, cinnamon, baking powder, baking soda and salt. In another bowl, combine eggs, buttermilk, oil, honey and vanilla; add to dry ingredients. Whisk for 1-2 minutes or until combined. Fold in chocolate chips.
Fill greased or paper-lined muffin cups two-thirds full. Bake at 350° for 20-25 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks. Yield: 1-1/2 dozen, 18 servings, 1 per serving.

Applesauce Oat Muffins

Ingredients:
1-1/2 cups quick-cooking oats
1-1/4 cups all-purpose flour
1/2 cup packed brown sugar
1 teaspoon baking powder
3/4 teaspoon baking soda
3/4 teaspoon ground cinnamon
1/2 teaspoon salt
1 cup unsweetened applesauce
1/2 cup fat-free milk
3 tablespoons canola oil
1 egg white
TOPPING:
1/4 cup quick-cooking oats
1 tablespoon brown sugar
1/8 teaspoon ground cinnamon
1 tablespoon butter, melted
Directions:

In a large bowl, combine the first seven ingredients. In another bowl, combine the applesauce, milk, oil and egg white. Stir into dry ingredients just until moistened. Fill muffin cups coated with cooking spray three-fourths full. Combine topping ingredients; sprinkle over batter. Bake at 400° for 16-18 minutes or until a toothpick comes out clean. Cool for 10 minutes before removing to a wire rack. Yield: 10 muffins.


Banana Peanut Butter Chip Muffins


Ingredients:
1-1/2 cups all-purpose flour
1/2 cup sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 egg
1/2 cup butter or margarine, melted
1-1/2 cups mashed ripe bananas (about 3 medium)
3/4 cup peanut butter chips
Directions:

In a bowl, combine the flour, sugar, baking powder, baking soda and salt. In another bowl, combine the egg, butter and bananas. Stir into dry ingredients just until moistened. Fold in chips. Fill greased or paper-lined muffin cups three-fourths full. Bake at 375° for 18-22 minutes or until toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Yield: 1 dozen.

Blueberry Cream Muffins

Ingredients:
4 cups all-purpose flour
1 cup sugar
6 teaspoons baking powder
1 teaspoon salt
2 eggs
2 cups milk
1/2 cup butter, melted
2 cups fresh or frozen blueberries
FILLING:
1 package (8 ounces) cream cheese, softened
1 egg
1/3 cup sugar
Dash salt
Directions:

In a large bowl, combine the flour, sugar, baking powder and salt. In another bowl, beat the eggs, milk and butter; stir into dry ingredients just until moistened. Fold in the blueberries. Spoon about 2 round tablespoonfuls into greased muffin cups. In a small mixing bowl, beat cream cheese, egg, sugar and salt; place about 1 tablespoon in the center of each muffin cup (do not spread). Top with remaining batter. Bake at 375° for 18-20 minutes or until a toothpick inserted in muffin comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely. Yield: 2 dozen.

Banana Muffins

Ingredients:
2 cups biscuit/baking mix
1 egg, lightly beaten
1-1/3 cups mashed ripe bananas
1/2 cup packed brown sugar
3 tablespoons milk
2 tablespoons vegetable oil
1 teaspoon vanilla extract

Directions:
Place the biscuit mix in a large bowl. Combine the egg, bananas, brown sugar, milk, oil and vanilla; stir into biscuit mix just until combined. Fill paper-lined muffin cups two-thirds full. Bake at 400° for 15-20 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Yield: 1 dozen.

Peanut Butter and Jelly muffins

Ingredients:
2 cups all-purpose flour
2 teaspoons baking powder
3/4 teaspoon baking soda
1/4 teaspoon salt
2 eggs
3/4 cup apple juice concentrate
1/2 cup reduced-fat chunky peanut butter
1/4 cup fat-free milk
3 tablespoons butter, melted
1/3 cup 100% strawberry spreadable fruit
Directions:

In a large bowl, combine the flour, baking powder, baking soda and salt. Combine the eggs, apple juice concentrate, peanut butter, milk and butter; stir into dry ingredients just until moistened. Coat 12 muffin cups with cooking spray. Spoon half of the batter into cups. Spoon about 1-1/4 teaspoons spreadable fruit into the center of each; top with remaining batter. Bake at 350° for 15-20 minutes or until a toothpick inserted into muffin comes out clean. Cool for 5 minutes before removing from pan to a wire rack to cool completely. Yield: 1 dozen.


Peanut Butter Oat Muffins

Ingredients:
1-1/4 cups all-purpose flour
3/4 cup quick-cooking oats
3/4 cup packed brown sugar
3 teaspoons baking powder
1/2 teaspoon salt
Dash ground cinnamon
1 egg
1/4 cup peanut butter
1-1/4 cups milk
1/2 cup chopped peanuts
Whipped topping and additional peanuts, optional
Directions:

In a bowl, combine the flour, oats, brown sugar, baking powder, salt and cinnamon. In another bowl, beat the egg, peanut butter and milk until smooth. Stir into dry ingredients just until moistened. Fold in peanuts. Fill greased or paper-lined muffin cups three-fourths full. Bake at 375° for 15-18 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Serve with whipped topping and peanuts if desired. Yield: 1 dozen.

Apple Cheddar Muffins

Ingredients:
2 cups all-purpose flour
1/3 cup sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon ground cinnamon
1-1/2 cups (6 ounces) shredded cheddar cheese, divided
1/3 cup grated Parmesan cheese
1 egg
1 cup buttermilk
1/4 cup vegetable oil
2 medium tart apples, peeled and chopped
Directions:

In a large bowl, combine the first six ingredients; stir in 1 cup cheddar cheese and Parmesan cheese. In a small bowl, beat the egg, buttermilk and oil; stir into dry ingredients just until moistened. Fold in apples. Fill greased or paper-lined muffin cups three-fourths full. Sprinkle with the remaining cheddar cheese. Bake at 400° for 20-22 minutes or until a toothpick comes out clean. Cool for 10 minutes before removing from pan to a wire rack. Yield: 1 dozen.

Chocolate Chip Muffins

Ingredients:
1/2 cup butter, softened
1 cup sugar
2 eggs
1 cup (8 ounces) plain yogurt
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
3/4 cup semisweet chocolate chips
TOPPING:
1/4 cup semisweet chocolate chips
2 tablespoons brown sugar
2 tablespoons chopped walnuts, optional
1 teaspoon ground cinnamon
Directions:

In a mixing bowl, cream butter and sugar. Add eggs, one at a time, beating well after each addition. Add yogurt and vanilla; mix well. Combine the flour, baking soda, baking powder and salt; add to the creamed mixture just until moistened. Fold in chocolate chips. Fill paper-lined muffin cups two-thirds full. Combine the topping ingredients; sprinkle over batter. Bake at 350° for 25-30 minutes or until a toothpick inserted near the center comes out clean. Cool for 5 minutes before removing from pans to wire racks. Yield: 1 dozen.


Golden Peach Muffins

Ingredients:
1-1/2 cups all-purpose flour
1 cup sugar
3/4 teaspoon salt
1/2 teaspoon baking soda
1/8 teaspoon ground cinnamon
2 eggs
1/2 cup canola oil
1/2 teaspoon vanilla extract
1 can (15-1/4 ounces) sliced peaches, drained and finely chopped
Directions:

In a large bowl, combine the dry ingredients. In another bowl, combine the eggs, oil and vanilla; stir into dry ingredients just until moistened (batter will be thick). Fold in peaches. Fill paper-lined muffin cups two-thirds full. Bake at 350° for 25-30 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Yield: 1 dozen.

Good Ol Banana Muffins

Ingredients:
1/2 cup butter, softened
1 cup sugar
2 eggs
3 medium ripe bananas, mashed
2 cups self-rising flour
1 teaspoon baking soda
1/2 cup chopped pecans
Directions:

In a mixing bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in bananas. Combine flour and baking soda; add to creamed mixture just until moistened. Fold in pecans. Fill greased or paper-lined muffin cups three-fourths full. Bake at 350° for 20-25 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks. Yield: 14 muffins

Cream Cheese Apple Muffins

Ingredients:
1 package (3 ounces) cream cheese, softened
3/4 cup sugar
2 eggs
1/2 cup milk
1/4 cup butter, melted
1 tablespoon lemon juice
1 teaspoon vanilla extract
1-1/2 cups all-purpose flour
1-1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup diced peeled tart apples
1/2 cup bran flakes
TOPPING:
1-1/2 teaspoons sugar
1 teaspoon ground cinnamon
Directions:

In a mixing bowl, combine the cream cheese, sugar, eggs, milk, butter, lemon juice and vanilla; beat until smooth. Combine the flour, baking powder, baking soda and salt; stir into cream cheese mixture just until moistened. Fold in apples and bran flakes. Fill greased or paper-lined muffin cups two-thirds full. Combine topping ingredients; sprinkle over batter. Bake at 375° for 20-25 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Yield: 1 dozen.

Brown Sugar Oat Muffins

Ingredients:
1 cup old-fashioned oats
1 cup whole wheat flour
3/4 cup packed brown sugar
1/2 cup all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
2 eggs
3/4 cup milk
1/4 cup vegetable oil
1 teaspoon vanilla extract
Directions:

In a small bowl, combine the first six ingredients. In another small bowl, beat the eggs, milk, oil and vanilla. Stir into the dry ingredients just until moistened.
Fill greased or paper-lined muffin cups two-thirds full. Bake at 400° for 15-17 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Yield: 1 dozen.

Applesauce Oat Muffins

Ingredients:
1/2 cup all-purpose flour
1/4 cup quick-cooking oats
3 tablespoons brown sugar
1 teaspoon baking powder
1/4 teaspoon ground cinnamon
1/8 teaspoon salt
1 egg
1/4 cup milk
2 tablespoons unsweetened applesauce
1 tablespoon canola oil
Directions:

In a bowl, combine the first six ingredients. In another bowl, combine the egg, milk, applesauce and oil. Stir into dry ingredients just until moistened. Fill four greased muffin cups two-thirds full. Bake at 400° for 12-15 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Serve warm. Yield: 4 muffins.

Banana Chip Muffins

Ingredients:
1-3/4 cups all-purpose flour
1/4 cup sugar
2-1/2 teaspoons baking powder
3/4 teaspoon salt
1 egg
1/2 cup milk
1/3 cup vegetable oil
1/2 cup mashed ripe banana
1/2 cup unsweetened applesauce
1 cup miniature semisweet chocolate chips
Directions:

In a large bowl, combine the flour, sugar, baking powder and salt. Combine the egg, milk, oil, banana and applesauce; stir into dry ingredients just until moistened. Fold in the chocolate chips. Fill greased muffin cups two-thirds full. Bake at 400° for 20 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Yield: 1 dozen.

Coffee Cake Muffins

Ingredients:
1/4 cup packed brown sugar
1/4 cup chopped pecans
1 teaspoon ground cinnamon
1-1/2 cups all-purpose flour
1/2 cup sugar
2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 egg
3/4 cup milk
1/3 cup canola oil
GLAZE:
1/2 cup confectioners' sugar
1 tablespoon milk
1 teaspoon vanilla extract
Directions:

In a small bowl, combine the brown sugar, pecans and cinnamon; set aside. In a large bowl, combine the flour, sugar, baking powder, baking soda and salt. In another bowl, combine the egg, milk and oil; stir into dry ingredients just until moistened.
Spoon 1 tablespoon of batter into paper-lined muffin cups. Top each with 1 teaspoon nut mixture and about 2 tablespoons batter. Sprinkle with the remaining nut mixture.
Bake at 400° for 22-24 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Combine glaze ingredients; spoon over muffins. Serve warm. Yield: 1 dozen

Chocolate Banana Muffins

Ingredients:
1/2 cup butter, softened
1/2 cup sugar
1/2 cup packed brown sugar
2 eggs
1-1/2 cups mashed ripe bananas (about 3 large)
3 teaspoons vanilla extract
2 cups all-purpose flour
3 teaspoons baking soda
1 cup chopped walnuts
1 cup (6 ounces) semisweet chocolate chips
Directions:

In a mixing bowl, cream butter and sugars. Beat in eggs, bananas and vanilla. Combine flour and baking soda; add to creamed mixture just until combined. Stir in the walnuts and chocolate chips. Fill greased or paper-lined muffin cups half full.
Bake at 350° for 15-20 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks. Yield: 2 dozen.

Apple Yogurt Muffins

Ingredients:
2 cups all-purpose flour
1/2 cup sugar
3 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon ground cinnamon
1 carton (8 ounces) vanilla yogurt
1 egg
1/4 cup vegetable oil
2 tablespoons milk
1 small tart apple, peeled and chopped
1/3 cup raisins, optional
TOPPING:
2 tablespoons all-purpose flour
2 tablespoons sugar
1/2 teaspoon ground cinnamon
1 tablespoon cold butter or stick margarine
Directions:

In a bowl, combine the flour, sugar, baking powder, salt and cinnamon. Combine the yogurt, egg, oil and milk; stir into dry ingredients just until moistened. Stir in apple and raisins if desired (batter will be thick). Fill greased or paper-lined muffin cups two-thirds full. For topping, combine flour, sugar and cinnamon in a bowl; cut in butter until crumbly. Sprinkle over batter. Bake at 400° for 20-24 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Yield: 1 dozen.

More of Camdens Transportation Unit & Lapbook

Here is the rest of the fun Camden and I had with his Transporation Unit.

We talked about things that start with the letter "T".


He then placed the pictures and words on the boxes.


I cut out these pieces of transportation clip-art.




He had to place the vehicles into groups.


I gave him these cars to color and we taped them into his lapbook.




We then used his play cars to play a matching game with the ones in his lapbook.

We also piled all of his toy vehicles into a pile and grouped them into sizes, colors, and types of vehicles.

We made shape trains out of crackers and cheese one day for a snack.




I couldn't decide which of these pictures to share....I thought they were both adorable! ;-)


I made him a fun play box for his toy cars. As he drives his cars on the roads we review our shapes.




I have been reading some poetry to him that involves transportation.




I printed out these pre-writing sheets for him to practice on.


He kept saying zoooom zooom as he was doing them. ;-)



We've had fun singing these songs together.
