Happy Easter! We're Back!

The girls and I arrived back home early this morning around 4am. We've been sleeping most of the day. We had a wonderful week in California but sure missed home and Bryan and the other kiddos. If you prayed for us and over our visit, thank you! Your prayers were coveted and I know they made a huge difference in our week. It's going to take me a few days to recover from our trip and get back into the flow of things so I may not be blogging again for a few days. I do have a review with a giveaway that will be posting sometime tomorrow though. 

I'm looking forward to sharing our pictures from this past week with you soon!

California Here We Come!


You may have seen the countdown in the sidebar of our blog? 

Emmy, Annie, and I are getting ready to fly out to California for a visit with my family. It has been too long since I have last seen them so this trip is exciting for all of us. Bryan is taking the week off of work to be home with the other kids. If plane tickets weren't so darn costly we would all go. Since it is so expensive, we decided on just the older girls going this time since they will remember the trip much more than the younger kids. Emmy & Annie have both been to California before but they were both so young they do not remember anything about those trips. So this will be like a first trip for them. It will also be the first time they have flown (again, that they can remember). The girls can't wait to see all of the places that they have heard about from Bryan and I through the years. If you don't know, Bryan and I were both born and raised in California. 

We have been watching the I Love Lucy Episodes 4 where Lucy and the gang visit Hollywood. We have a day trip planned to Hollywood with my mom and dad, for the girls to see the Hollywood Walk of Fame and other things, so it has been fun watching the episodes in preparation for that time. 

I tend to write out most of my blog posts, with the exception of my Simple Diaries, in advance. I schedule my posts to post on certain days after I get them written. I had hoped to do that for this next week as I have plenty to share from these past 3 weeks, but we have been so busy preparing for this trip that it has cut into my blogging time these past 2 weeks. I am therefore just going to take a vacation from the blog while we are on vacation. *Grin* 

We fly out of Atlanta, Georgia tomorrow, the 22nd, and have a non-stop flight to Los Angeles (5 hours). We actually arrive in LA at 2pm, even though our flight out of Atlanta is at noon, because of the time change. The girls and I will then rent a car to drive from LAX to my parents home in Bakersfield (a 2 hour drive). It will be a long day for us as we have a three hour drive from our home to get to the airport in Atlanta that morning, so 5 hours of driving and 5 hours of flying for the day. Our return flight is on the 30th and we won't arrive in Atlanta until midnight that night so technically we will be returning home on Easter Sunday morn. 

This is the first time I have flown since 911 and a lot has changed since then. I'm not looking forward to some of those changes. Your prayers are appreciated for safe travels and for getting through all of the extra security checks that are now in place without a big fuss. I am praying that they girls won't have to be patted down (me too) as we go through security and that our trip will be uneventful, especially since this is their first time to fly. They are a bit nervous and flying has always made me nervous, so please be in prayer over that too. I am really hoping that the overall experience will be a peaceful and good one for us. Your prayers for safe driving to and from the airport are appreciated too. Our car is old and we are hoping to not have any incidents on the way to Atlanta for our flight out. It has also been 20 years since I have driven in Los Angeles traffic and I have to say that driving in Alabama has spoiled me a bit. Please pray for a hedge of protection around us during the entire trip and for our time with family to be special. If you would also be in prayer over good health too I would greatly appreciate it. We have had a horrible couple of months with strep throat, colds, and the flu. Not like our family at all to be as sick as we have been these past couple of months. The girls and I are doing better but given that it's been a bad couple of months for the flu and other things, nation wide, and we will be in some touristy spots and on an enclosed airplane, I am praying for a hedge of protection for us all health wise. And don't forget Bryan and the kids in your prayers, while they are here at home surviving without us older females. *Wink* 

I'll post here on the blog again as soon as we return from California. You know me, I am sure I will have a million pictures to share of our trip. *Grin*

My Simple Diary: Week 12 of 2013

Outside My Window:

Really pretty weather lately. Warm. It was 61 yesterday but these next few days are supposed to be mid-70's. All 4 of our fruit trees that Bryan planted last August/September are blooming! So excited over that. We have gardening on our mind. Bryan is planning on working on the yard and garden on his week off while the girls and I are in California. We have some brush he cut down this winter that we need to burn and some cleaning up of the garden beds and yard overall. I noticed yesterday that my hydrangea in one of our front flower beds is flowering too. As much as I love winter, I always enjoy seeing spring sprout up too.  

What We Have Been Watching: 

For Houston's birthday this past weekend, the older kids and Bryan and I watched the latest Red Dawn movie and Skyfall. Those were Houston's requests for his birthday weekend. We really liked both though I was disappointed in Red Dawn's ending. Of course I didn't think it was nearly as good as the original. We thought the first one had a better storyline. This second one, while not a bad movie, was more action packed. Emmy really wanted to watch it because Josh Hutcherson plays in it (the boy from Hunger Games). *Grin* We all thought Skyfall was good. I love a good James Bond movie.

What I Have Been Reading:


Almost finished with it and I have loved it even more than I thought I would. All of the main places around Branson that Bryan and I have enjoyed on our trips, are mentioned in the book. It makes a book even more special to me when I can connect in that way to its location. Being the theatre lover that I am, I have really enjoyed the theatrical part of the storyline and the main characters are awesome! If you like Christian writing that is wholesome and clean, you might enjoy this one. In my opinion it's even more wholesome and clean than most christian fiction. 

Recent Happenings: 

It's been crazy busy here with Easter stuff, Houston's birthday celebrations, school stuff, St. Patricks Day, and 1st day of Spring stuff all while getting ready for our trip to CA at the end of this week. I'm working hard to catch up on laundry before our trip. Spent some time this weekend getting out the younger kids Spring clothing and started boxing up the winter stuff. They were running around outside in long sleeves and starting to sweat. 

Kids had their 1st water balloon fight this weekend in honor of the spring weather that has hit. Ally has been dying to get her bathing suit down and run around in it.

The 2nd Wednesday night of each month is always motion night for the teens at church. Houston, Emmy, and Annie LOVE motion night and always look forward to it. They go with Abby (Emmy's best friend), Katie and Ricky (Abby's siblings). Teens drive up from Tuscaloosa and Montgomery to be a part of Motion Night each month. Here are a few pictures from this past Wednesday that Emmy took with her ipod. As always the message and worship were wonderful! 




I finished my antibiotic for the strep throat. It was the first time I have ever had strep and boy it's painful! I'm doing better though my Fibro seems to be attacking my neck and head areas. Fibro is crazy in that it travels around the body and tends to attack one specific area more so than other areas at times. I have struggled with migraines this past week and one bad one on Friday. Migraines are always a part of the deal when my Fibro decides to attack my upper body. Sore throat and ear pain are also a part of it. I've been waking up with an extremely dry throat. It gets better as the day goes on and I drink fluids but the dull ache in my throat and ears remain throughout the day. It's annoying more than anything. It's from the tender points in my neck area, above my collar bone, contracting and it happens every few months or so. I'm really praying that my Fibro will turn it's focus to my legs or elsewhere before we leave on Friday. I can deal with the pain in my legs and even my arms so much easier than my neck and head areas. If you would pray with me I would appreciate it. We seem to have some lingering coughing and congestion in our home too, with the kids, but I believe it is all sinus related. 

In My Kitchen: 

This past week I tried a new recipe from Pinterest. Lemon Chicken! Any Everybody Loves Raymond fans out there? I had never made Lemon Chicken but due to my love of the TV show, I just had to try the recipe when I saw it. I doubt Marie (from Everybody Loves Raymond) would have approved of the dish but we liked it. My crew gave it a thumbs up. It will be simple meals this next week like beef stroganoff, pizza, and spaghetti. Things that don't take long to make or clean up. I am still using up the deer meat that my neighbor Maria gave us. I'm thawing it in batches and using it in place of dishes that call for ground beef. I have found that as along as I season it, you can't tell it's not ground beef.

Bryan will be playing the roll of chef, after Friday, for a week. He is going grocery shopping to get the things he and the kids want to eat while the older girls and I are in California. Ravioli, pizzas, mac-n-cheese, pancakes and waffles, chili dogs, etc.

Annie's On Pinterest!

We recently signed Annie up for a Facebook account for one reason....so she could easily join Pinterest! She really doesn't have much interest in Facebook and probably won't be using her account over there much, but she has been very eager to get on Pinterest. Can you guess what for? Yup...the recipes. *grin* 

Within 30 minutes of getting her Pinterest account, both of our ovens were being pre-heated. 
*big grin* 

Here are two recipes that turned out wonderful! The lemon brownies have been made twice now. 

Lemon Brownies

3/4 C flour
3/4 C sugar
1/4 t salt
1 stick butter, soft
2 eggs
juice from 1/2 lemon (about 1T)
zest from 1/2 lemon (about 1t)

Combine the flour, sugar and salt in a large bowl. Mix in the softened butter. In another bowl whisk the eggs with the lemon juice and zest. Add to the larger bowl and mix well. Pour into prepared 8X8 brownie pan. Bake at 350 for 25 minutes. You can double the recipe and bake in a 9X13 pan for 30 minutes. Remove and let cool, then glaze.

Glaze: 
1/2C powdered sugar
1 T lemon juice
additional lemon zest
Stir together.

*Note- don't skip the glaze! 




Homemade Nutter Butter Cookies 
(insanely good!) 

Cookies:
1 cup butter, room temperature
1 cup creamy peanut butter
1 cup granulated sugar
1 cup light brown sugar, packed
2 eggs
2 tsp vanilla
2 1/2 cups flour
1 tsp baking soda
1 tsp baking powder
approx 1/3 cup extra sugar for rolling

Filling:
1 cup butter, room temperature
1 cup creamy peanut butter, room temperature
4 cups powdered sugar
2-3 tablespoons milk

Cookies:
In a large bowl with mixer beat butter, peanut butter, and sugars until light and fluffy, about 30 seconds on medium-high speed. Lower mixer to medium and add eggs and vanilla continuing to mix until combined. Turn mixer to low and add in flour, baking soda and baking powder. Mix until combined. Refrigerate dough for 1 hour.

Preheat oven to 375°
Form chilled dough first into 1 inch balls and then form into a log shape. Roll the log-shaped dough in extra granulated sugar and place on baking sheet about 2 inches apart. Using a fork press down on cookie creating a criss-cross pattern. Pinch the center to create the peanut shape.

Bake for 6-8 minutes until edges are lightly golden. Cool on baking sheet 2-3 minutes and then transfer to wire rack to continue cooling.

Filling:
In a large bowl beat butter and peanut butter together until smooth. Slowly add in your powdered sugar and turn mixer speed up to medium and beat until filling is smooth. Add your milk, one tablespoon at a time until desired consistency is reached.
Spread a heaping tablespoon of filling onto the bottom of one of the peanut butter cookies and then top with another cookie to create sandwich.




The filling! 


These taste so much like the store bought Nutter Butters. They are just soft, instead of hard cookies. So delicious!

Houston Turns 16 Today!!!!

I can't believe it! We have reached the 16 point in our home! I have a child old enough to drive! Houston isn't quiet ready to get his license just yet, but just knowing that he legally could, amazes me! 

I am so proud of the young man that Houston has become. I hear so many people speak ill of the teenage years but I happen to love having teens. It is definitely a different season and one that holds challenges and prayers all its own, but it's a precious time of watching my children mature, narrow down their interests, and become more of who God created them to be. No longer is it dinosaurs and G.I. Joe, now we have moved on to target and skeet shooting, war history, and Starcraft. I still see that same little boy on most days though. The one that has always been patient and gentle and concerned for his little sisters. That same little boy that makes us laugh with his funny sense of humor. That same boy that is always eager to help out when needed. That same boy that is withdrawn and shy until he gets to know you, then lookout! *Grin* 

It is hard to believe that 16 years have passed since he lay in my arms for the first time. He will always lay softly in my heart as my first born, my son, my delight and joy.
